Tater Tot Waffles is pure genius. It’s like the lazy man’s loaded baked potato but with crispy bits everywhere. I can imagine the ways that I could use this as a base for all kinds of yummy goodness like chili, or stew.

  • 6 slices of thick cut bacon cooked and chopped into ½ inch pieces
  • ¼ cup melted butter unsalted
  • 1 32- ounce bag tater tots room temperature
  • Kosher salt
  • ¾ cup sharp cheddar cheese shredded
  • 3 tbsp sour cream 1 tbsp per waffle
  • 3 scallions finely chopped


  1. Preheat waffle maker to highest setting. Brush waffle maker with butter and arrange tater tots in an even layer across entire surface of waffle iron. Season with salt. Press down on lid to close and cook waffle until golden brown, 8-12 minutes.
  2. Remove waffle and transfer to a plate. Top with sour cream, cheese, bacon, and scallions.
