Buffalo Chicken Meatballs with Blue Cheese Mousse

Buffalo Chicken Meatballs with Blue Cheese Mousse is perfect for those who want 100 percent meat and no bones. This is a perfect appetizer for the big game and you can easily double, or triple the recipe with no problems!
I love eating buffalo wings, but I wanted to take those same flavors and remove the bones. Ground turkey can be substituted if you can’t find ground chicken. And the blue cheese is optional as well, but it really makes the dish!

Ingredients
Buffalo Chicken Meatballs Stuffed with Blue Cheese Mousse
- 1 lb. ground chicken
- ¼ cup finely chopped carrots
- ¼ cup minced celery
- ½ tsp kosher salt
- ¼ tsp black pepper
- 1 egg
- ½ cup breadcrumbs
Blue Cheese Mousse
- 1 tbsp blue cheese room temperature
- 2 tbsp cream cheese room temperature
Buffalo Sauce
- ½ cup Frank’s Hot Sauce
- ½ cup unsalted butter melted
Instructions

Preheat oven to 450 degrees.

In a medium-sized bowl, add the ground chicken, carrots, celery, salt, pepper, and an egg and mix well. Once mixed, add the breadcrumbs and mix until incorporated. Set aside.

In a small bowl, add the blue cheese and the cream cheese and mix well.

Line a sheet pan with foil for easier cleanup. Take a small ice cream scoop and scoop 12 balls on the sheet pan. With your index finger, make a well in the center of the meatball. This is where your filling will go. Add equal amounts of the blue cheese mixture to all of the meatballs. Then wet your hands with water and begin to roll the meatball so that the blue cheese mixture is completely covered with the ground chicken.

Bake in the oven for 10 minutes.

While the meatballs are in the oven, take the Frank’s hot sauce and the melted butter and mix well. Once the meatballs have been in the oven for 10 minutes, take it out and baste with the hot sauce and put back in the oven for an additional five minutes.

Plate the meatballs and pour the remaining hot sauce over the meatballs and garnish with blue cheese. Serve with celery and carrots!
