Sausage, Mushroom & Cheddar Frittata

Sausage, Mushroom & Cheddar Frittata is the perfect meal for any time of the day. Simply throw together a side salad or a hot bowl of soup, or fresh fruit and voila, you have a complete meal. This frittata can be customized to your liking. Simply swap out the protein, vegetable, or cheese and it’ll still be delicious.
Brown your sausage
Saute mushrooms and shallot
Beat eggs
Add eggs and top with cheese. Bake.

Ingredients
- 8 oz pork sausage I used Bob Evans
- 8 oz baby bella mushrooms sliced
- 1 shallot finely chopped
- 6 eggs beaten
- ½ tsp. kosher salt
- ¼ tsp black pepper
- 1 cup cheddar cheese
- 1 tbsp parsley finely chopped
- 2 tbsp olive oil
Instructions

Preheat oven to 350 degrees

Sauté pork sausage until no longer pink, about 5-6 minutes. Remove from pan.

Add a few tablespoons of olive oil, and sauté the mushrooms and shallots until tender, about 5-6 minutes. Add sausage back into the pan, and remove from heat.

Beat the eggs, and add salt and pepper. Pour eggs over the sausage and mushroom mixture. Top with the cheddar cheese, and bake for 12-18 minutes until set and the cheese has melted. Garnish with parsley.
I love this recipe because it is so versatile and easy to whip up. It turns out perfectly everytime except, I may have to start making two because it goes fast!
