I love to travel. Whenever I start to plan my next trip, there are two things that are deciding factors; food and the beach. My most recent trip was to Jamaica, and it was my second time visiting the island. I won’t even begin to tell you where I stayed on my first visit because where I stayed this time, was no comparison. If you visit Montego Bay, you must stay at the Tryall Club. It’s a resort of over 90 privately owned villas, that comes fully staffed with a housekeeper, gardener, butler, and chef. Yes, you heard correctly, the chef had a chef cooking for her!

While vacationing in Jamaica, Chef Spangy made the most delicious meals! I ate oxtails, jerk pork, rice and peas, bammy, and escovitch. Chef Spangy even shared her secret ingredient for her oxtails-ketchup. Her oxtails were the best I ever had. I was inspired by my trip to Jamaica that when I came home, I made some! If you have the chance to stay at the Tryall Club, stay at Fairwinds and let Chef Spangy pamper you!


The food looks good. Not clear how often you go to Jamaica, but Jamaica seems like a pretty well-traveled path for cooking by Americans with African heritage. Any chance of you traveling to Central/South America, Africa or Asia?
I usually travel to Jamaica every three months. I’ll actually be there next week. I have never traveled to Central/South America or Asia, but it’s definitely on my bucket list!
