Pork Chops with Mushroom Cream Sauce

Ingredients

  • 2 Bone-in Pork Chops
  • 1-8 oz. sliced Portobello mushrooms
  • ¼ cup yellow onion diced small
  • 1 clove of garlic finely chopped
  • ¼ cup chicken stock
  • ¾ cup heavy cream
  • 1 tbsp. Unsalted butter
  • Salt and pepper
  • Olive oil

Instructions

  1. Season pork chop with salt and pepper.
  2. Add a few tablespoons of olive oil to the cast-iron pan. Sauté the pork chop on one side until golden brown about 3-5 minutes on each side. Do not cook the pork chop completely since it will finish cooking in the sauce. Remove pork chops from pan.
  3. Add 2 tablespoons of olive oil to the pan, and sauté the mushrooms and onions on medium-high heat for 5-7 minutes until golden brown. Add the garlic and cook for one minute.
  4. Add chicken stock to mushrooms, then cook for 1 minute, then add heavy cream and let cook for 2 minutes. Season with salt & pepper to taste.

  5. Add pork chops back in the pan and let cook for a few more minutes until done.

Recipe Notes

The mushroom cream sauce will be loose. If you want a thicker sauce, you can add cornstarch or flour to thicken.
