  • 8 oz pork sausage I used Bob Evans
  • 8 oz baby bella mushrooms sliced
  • 1 shallot finely chopped
  • 6 eggs beaten
  • ½ tsp. kosher salt
  • ¼ tsp black pepper
  • 1 cup cheddar cheese
  • 1 tbsp parsley finely chopped
  • 2 tbsp olive oil


  1. Preheat oven to 350 degrees
  2. Sauté pork sausage until no longer pink, about 5-6 minutes. Remove from pan.
  3. Add a few tablespoons of olive oil, and sauté the mushrooms and shallots until tender, about 5-6 minutes. Add sausage back into the pan, and remove from heat.
  4. Beat the eggs, and add salt and pepper. Pour eggs over the sausage and mushroom mixture. Top with the cheddar cheese, and bake for 12-18 minutes until set and the cheese has melted. Garnish with parsley.
