I love to travel. Whenever I start to plan my next trip, there are two things that are deciding factors; food and the beach. My most recent trip was to Jamaica, and it was my second time visiting the island. I won’t even begin to tell you where I stayed on my first visit because where I stayed this time, was no comparison. Yes, you heard correctly, the chef had a chef cooking for her!
While vacationing in Jamaica, Chef Spangy made the most delicious meals! I ate oxtails, jerk pork, rice and peas, bammy, and escovitch. Chef Spangy even shared her secret ingredient for her oxtails-ketchup. Her oxtails were the best I ever had. I was inspired by my trip to Jamaica that when I came home, I made some!
